Originally from Costa Rica, Chef “Jimbo” Jimena was a foodie growing up. After studying arts for several years, she decided to combine the two things she was most passionate about: food and art.
Chef Jimena graduated with a Dîplome Culinaire d’Hôtelerie from Le Cordon Bleu in 2017. Following her love of food and traveling, Chef Jimena spent time training in Spain and then in Italy, learning about Italian culture and food.
Her next adventure was in Aspen, where she embraced the nature and community and set down roots. Her work in the iconic town includes Japanese influence from famed Matsuhisa in Aspen. She brings this education and experience to her guests, creating sensations, emotions and pure satisfaction.
