Things are big in Aspen: big mountains, big challenges on the trails, golf courses, and slopes, and, after a day spent outside, big appetites. When they’re not busy curating experiences for guests in the Cuvée community, our team members in Aspen are keeping up with the area’s best gourmet dining. We’re delighted to share with you some of our local experts’ favorite dining spots.

Matsuhisa

The original Aspen outpost of the famed LA-based empire helmed by chef Nobu Matsuhisa is a must-try for sushi lovers. We adore everything on the menu here, which features innovative dishes that combine Japanese and Peruvian flavors, plus ultra-fresh local ingredients. Signature dishes include Chef Nobu’s classic black cod in miso, yellowtail sashimi with a jolt of jalapeño, and spicy tuna crispy rice, but it’s worth flipping the script and trying the tiradito, Peru’s answer to sashimi. You can also enjoy a selection of premium sakes, wines, spirits, and cocktails, ideally from Matsuhisa Upstairs’s well-appointed patio with views of Aspen Mountain.

Steakhouse 316

 Besides its superb cuisine, the highlight of Steak House No. 316 is the ambience. The restaurant is located in a historic building that dates back to 1886 and has been renovated to preserve its original charm. With its dark wood floors, tufted booths in red velvet, antique chandeliers, and vintage photos, taxidermy, and memorabilia, it transports you to luxurious steakhouses and saloons of the past. Our favorite dinner here is the tender Eye of Ribeye alongside the loaded twice-baked potato. Choose from a selection of mouth-watering sauces—everything from a classic Béarnaise to an over-the-top blue cheese bone marrow butter—but be sure to save room for dessert, because the bread pudding here tops our list. 

Casa d’Angelo

Few things beat a beautiful Italian meal. We love the classic yet innovative Italian fare at Casa d’Angelo, a chic spot helmed by chef-owner Angelo Elia, whose pizza, bar, tapas, bakery, and traditional Italian cuisine are synonymous with fine dining in South Florida. Chef Elia brings his taste and talent to Aspen at the newest location of his signature restaurant, which boasts second-to-none views from its private dining room and outdoor patio. Our favorite dish here is the succulent linguine vongole, but you’re sure to find something delicious on its rotating seasonal menu.

Betula

Stepping into Betula is a bit like stepping into your own living room, if that living room were in Paris and had an in-house DJ spinning 24-7. In this light-filled space, loved by Goop staffers and restaurant critics alike, Chef Laurent Cantineaux marries classic white tablecloth fine dining and his well-honed French culinary training with flavors drawn from South America and the Caribbean. Enjoy a refreshing watermelon cocktail al fresco on the rooftop. Paired with our favorite tuna tacos, it’s the perfect summer refresher.

Chef Jimena

We couldn’t write about dining in Aspen without mentioning Cuvée’s very own Chef “Jimbo” Jimena Yglesias. With a Dîplome Culinaire d’Hôtelerie from the Cordon Bleu under her belt and experience honed at Aspen’s much-loved Matuhisa, she brings extraordinary flavors and artistry to everything she prepares for our guests.
